Happy Wednesday! Today's recipe is a variation on the fruit crumble that was featured on Martha Stewart's St. Patrick's Day show. I'm sorry I didn't take a picture of it - it got eaten up before I thought to get out the camera...
Mixed Fruit Crumble
1/2 cup butter, softened plus additional for greasing the baking dish
2 cups seeded, peeled and chopped apple
1/4 cup liquour (I used Grand Marnier but you could use whatever you fancy)
1 1/2 cups light brown sugar
1 1/2 cups rolled oats
1/2 cup finely chopped pecans
1 cup flour
1 teaspoon baking powder
2 teaspoons ground cinnamon
1 cup fresh, sliced strawberries
1 cup fresh blueberries
1 cup whipping cream
2 tablespoons sugar
1 tablespoons of cream liquour (I used Bailey's for St. Patty's but you could use whatever you like)
Preheat oven to 350 degrees F. Grease a 2-quart, deep baking dish.
Mix together apples, liquor and 1/2 cup of light brown sugar in a medium pot over medium-low heat. Cook until apples begin to soften. Remove from heat and set aside.
In a large bowl, mix together oats, flour, pecans, baking powder, 1 teaspoon of cinnamon and remaining 1 cup of brown sugar. Cut in butter until the mixture resembles coarse crumbs. I use a pastry blender for this but you can also use two knives and just cut through the mixture until it blends together. Don't be afraid to use your hands as well.
Mix strawberries and blueberries into apple mixture with remaining 1 tsp of cinnamon. Layer the fruit mixture and crumble mixture in the baking dish - alternating with 1/2 the fruit mixture and half the crumble mixture.
Bake in oven about 35 to 40 minutes.
While the crumble is baking, whip the whipping cream with the sugar. When soft peak's have formed, fold in the cream liquour.
Serve the crumble warm with a spoonful of the whipped cream.
My husband loved this dish. We traditionally have Irish Stew on St. Patty's Day and this was a lovely end to the meal.

I have a topping that I often keep on hand for apple crisp, peach crisp, etc. I have used it in the winter for a topping on the frozen berries mix that you can buy. It is delicious!!
I will have to try your recipe.
